Broccoli-Cauliflower Soup

Instructions

  1. Grab all supplies, and wash and prep all fresh ingredients.

    Pro Tip: Press fresh garlic first, then leave to sit in a pinch bowl for 10-15mins prior to adding to the pot. Click here to learn why.

  2. Add butter, onion, garlic and carrots to a large Dutch oven or stockpot on medium-low heat.

  3. Stir occasionally and allow to sauté for approximately 20 minutes until carrots are softening and onion and garlic is browning.

  4. Add frozen broccoli and cauliflower.

  5. Stir occasionally and allow to sauté for approximately another 20 minutes until broccoli and cauliflower are thawed and softening.

  6. In a measuring cup or small bowl, add 1 cup of bone broth and whisk the 3tbsp of flour into the bone broth until well mixed. Now pour into the Dutch oven or stockpot.

  7. Pour in the remaining 5 cups of bone broth and bring to a boil.

  8. Put the lid on, turn the heat down to low and simmer for 20 minutes.

  9. Add the can of coconut cream and stir in until combined.

  10. Carefully pour the hot mixture from the Dutch oven/stockpot into the blender, and blend until smooth.

  11. Serve warm. (Optional - Sprinkle shredded cheese on top or stir in.) Enjoy!

FREEZING INSTRUCTIONS

Let cool to room temperature and freeze in single-serve freezer-safe containers (i.e. Glasslock)

▢ 1/2 sweet onion, diced

▢ 2 cloves heirloom garlic, pressed

▢ 4tbsp salted organic butter

▢ 1 bag of frozen organic cauliflower

▢ 2 bag of frozen organic broccoli

▢ 1 large organic carrot, diced

▢ 3tbsp sprouted whole wheat flour (or flour of your choice based on dietary needs/preferences)

▢ 6 cups bone broth, chicken OR beef (our preference is “Broya Parsley & Cumin Beef Bone Broth OR Broya Turmeric & Ginger Chicken Bone Broth)

▢ 1 can of organic full-fat unsweetened coconut milk

▢ 2 cups shredded cheese (optional) [our preference is “President’s Choice Lactose-Free Triple Cheddar Shredded Cheese Blend”]

▢ 1 pinch of Himalayan sea salt (optional)

▢ Fresh cracked pepper (to taste – optional)
